According to Economic Development Director Fred A. Messore, the 2,600-square-foot restaurant that sits on .41 acres with a boat launch and docks at 337 Roosevelt Drive was sold to Peter Hamme for $850,000.
Hamme, according to his biography, is the former owner/chef of the Stone House Restaurant in Guilford. Hamme plans to rename the new restaurant Stone’s Throw, which Messore said will be “a semi-casual full-service restaurant, serving American eclectic cuisine with an emphasis on fresh seafood, locally sourced ingredients, craft cocktails and a relaxed, quality dining experience.” Messore, who is senior vice-president/development specialist for Colonial Properties Inc. in Orange, helped facilitate the sale. Messore said Hamme is doing extensive renovations, reconfiguring the kitchen to maximize the use of fresh, local ingredients, while frozen storage is being reduced to minimal levels to allow more refrigeration of house-made selections, ranging from appetizers to desserts. In addition, “the bar is getting a face lift to reflect a turn-of-the-century industrial theme, reflecting the history of the Valley,” Messore added. Operational upgrades are also being implemented, he said, to enhance efficiency of service.
Messore is anxious to see the new place open. “Stone’s Throw is filling a niche that is largely vacant in the Valley, while offering a comfortable gathering place year-round,” he said. The Lake House was a seasonal restaurant, closing in the winter months, Messore said. Messore expects Stone’s Throw to open some time next month, possibly before Memorial Day, the unofficial kickoff to summer. “It’s always exciting anytime a new business comes to Seymour, and Stone’s Throw is going to be a true destination spot,” said First Selectman Kurt Miller. “Businesses are realizing that Seymour is not only a great place to live, but to do business, too. And successful business owners in other communities are realizing the value that Seymour has.” According to his biography, Hamme, who holds a bachelor’s degree in food services management from Syracuse University, began his culinary career at La Camargue Restaurant in Philadelphia, where he trained under Chef Marcel Brossete.
Over the past 31 years, Hamme opened the Philadelphia Marriott West, as well as the White Elephant Boutique Hotel on Nantucket Island. Prior to arriving in Connecticut, he joined the EJ/ Carmine restaurant team of New York City and assisted in the opening of several franchised EJ’s Luncheonette units there and in Westport. Hamme served as executive chef at the Huntington Hilton on Long Island, and later at Bennett’s Steak House in Stamford, where he developed and oversaw both a prime beef aging room and a paired wine program. Hamme and his team earned Golf Digest’s highest rating for a resort while he was managing the kitchen and five restaurants, one of which held a AAA Five Diamond rating at the Marriott at Sawgrass Resort in Florida. Hamme holds the American Culinary Institute’s Award of Culinary Excellence, and took first place in the N.Y. State Lamb Recipe Competition, Professional Division. For the past 14 years, Hamme has served as owner/chef of the Stone House Restaurant in Guilford, where it earned an “excellent: rating from the New York Times, along with a #25 rating in Zagats.
