Because lunch al-desko will never measure up to what’s on offer below the offices of Business SA on Greenhill Rd.It’s a lovely irony that an organisation which promotes business productivity has, in Whistle & Flute, a tenant that does its utmost to keep its patrons from going back to work.W & F is the surprising left-field project from young entrepreneur Josh Baker who along with a few like-minded mates has made his mark along Peel and Leigh streets with Coffee Branch, Clever Little Tailor and Pink Moon Saloon.Showing typical lateral thinking, he saw the potential in a location on the fringe of the city where both the corporate world and local community were under-serviced. And by enticing Stewart Wesson (Flinders St Project) to come on board, he found a chef who knows precisely what they want.You can see Wesson, with his top-knot and tattoos, putting the final flourish of greenery or dukkah sprinkle on plates as they leave the open kitchen behind the central bar and servery.

While a few tables are squeezed as well into this small indoor space, most of the action is out under the red-brick cloisters that have been converted to an all-weather courtyard with blinds and roofing.With timber beams and venetians, greenery overhead and picnic-bench-style seating, the fit-out by Matiya Marovich of Sans Arc Studio (Pink Moon Saloon) feels like a flash cabana in the parklands, albeit one that stays surprisingly cosy, even on the most crappy winter days.Add a few experienced hands on the floor, a clever, user-friendly wine list and even a DJ set up at the corner of the bar and it makes for a Friday lunch that could easily stretch through to dinner.Wesson’s short menu (only six lunch choices) swings from Middle Eastern spices to Asian chilli and fish sauce without drawing breath. Throw in the handfuls of herbs and little crunchy surprises he uses and it is reminiscent of a simpler, cheaper Peel St (the restaurant that is).His Thai-style crispy eggplant has all that and more.

Narrow wedges of the veg are coated in corn and rice flours, then fried until a pale, crunchy casing forms around the squidgy flesh. They are smeared with a little chilli jam and tossed with shallots, mint, coriander and fried kaffir lime and curry leaves. But the surprise comes in pops of pomegranate seeds and the little puddles of a dressing mix of buttermilk and pomegranate molasses (where you might expect coconut) that takes the dish to another place.Each bite is just a little different and if you don’t scrape up every drop of that dressing I’ll be amazed.At $18, it’s a steal.A base layer of creaminess and a crown of herbs seem the standard operating procedure here.For the Middle Eastern lamb, yoghurt does the job. Spiced clumps of lamb mince are fried at high heat so all the edges, and assorted little bits of rubble, become deliciously dark and toasty.
